Switchel is one of those old-fashioned drinks that feels surprisingly modern. It’s bright, tangy, lightly sweet, and naturally refreshing—like lemonade with a gingery twist. Made with water, apple cider vinegar, ginger, and a touch of sweetener, it comes together in minutes.

- Fresh ginger (about 2–3 inches)
- Apple cider vinegar (raw, unfiltered if possible)
- Sweetener: maple syrup, honey, or molasses (traditional)
- Cold water (still or sparkling)
- Fresh lemon or lime (optional, for brightness)
- Sea salt (a small pinch, optional)
- Ice (for serving)
Grate or slice the ginger: Peel if you like, then grate about 2 tablespoons, or slice thinly. Grating gives more flavor faster.
Muddle the ginger: In a large jar or pitcher, add the ginger with a splash of water.
Use a spoon or muddler to bruise it and release the oils.
Add the vinegar: Pour in 1/3 cup apple cider vinegar. This is the backbone of the tangy flavor.
