Prep the dates: Pit them if needed. If your dates feel firm, microwave with 1 tablespoon water for 15–20 seconds to soften.
Blend the base: Add dates, milk, vanilla, and salt to the blender. Blend on high until the dates fully break down and the mixture looks smooth and speck-free.
Add ice and blend again: Toss in the ice and blend until thick, creamy, and frosty. Scrape down and re-blend if needed.
Taste and adjust: Too thick? Add a splash of milk. Not sweet enough? Add another date. Want more richness? Blend in a spoonful of nut butter.
Serve immediately: Pour into a cold glass. Top with a dusting of cinnamon or a drizzle of nut butter if you like.
