  • 1 (10-ounce) package frozen chopped spinach, thawed and very well drained
  • 1 (1.4-ounce) packet Knorr Vegetable Recipe Mix
  • 1 cup mayonnaise
  • 2 cups sour cream
  • 1 cup finely chopped water chestnuts (optional)
  • 3 green onions, thinly sliced
  • Pinch of kosher salt and black pepper, to taste
  • Optional add-ins: a squeeze of lemon, a pinch of garlic powder, or a handful of shredded Parmesan

  • Thaw the frozen spinach completely and squeeze out as much water as possible until very dry.
  • In a large bowl, stir together the sour cream and mayonnaise until smooth.
  • Sprinkle in the Knorr Vegetable Recipe Mix and stir until evenly incorporated.
  • Fold in the well-drained spinach, chopped water chestnuts, and sliced green onions until uniform.
  • Taste and season with a small pinch of salt and black pepper; add a squeeze of lemon if desired.
  • Cover and refrigerate for at least 2 hours, or up to 4 hours, to allow the flavors to meld.
  • Stir, transfer to a serving bowl, and garnish with additional green onions or paprika if desired. Serve with bread, crackers, or fresh vegetables.

Notes

For best texture, squeeze spinach very dry and avoid low-fat dairy. Chill at least 2–4 hours. Store leftovers refrigerated up to 3–4 days; do not freeze. Optional variations: add shredded Parmesan, swap half the sour cream for full-fat Greek yogurt, fold in chopped artichokes, or add jalapeños/red pepper flakes. To make without the packet, season with dried onion, garlic powder, dried parsley, celery salt, and paprika to taste.
