  • 1 tablespoon mayonnaise (or avocado oil mayo)
  • 2 tablespoons finely ground blanched almond flour
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon fine sea salt
  • 1/4 teaspoon white vinegar or lemon juice (optional)
  • 1/8 teaspoon butter extract or a tiny pat of melted butter (optional)
  • Neutral oil or spray for the waffle maker

  • Preheat the waffle maker until fully hot and lightly oil or spray the plates.
  • Whisk the egg, cream cheese, and mayonnaise in a bowl until completely smooth with no visible cream cheese bits.
  • Whisk in the almond flour, baking powder, and salt, then add vinegar or lemon juice if using, stirring until the batter is thick and uniform.
  • Pour half the batter into the center of the hot waffle iron, close the lid, and cook for 3–4 minutes until steam mostly stops and edges are pale golden.
  • Remove the chaffle and place on a rack for 1 minute to set.
  • Repeat with the remaining batter.
  • Toast the chaffles in a toaster or air fryer at 375°F for 2–3 minutes if a crisper, more bread-like texture is desired.

Notes

Use blanched, super-fine almond flour for the smoothest texture. For dairy-free, replace cream cheese with dairy-free cream cheese or 1 tablespoon thick coconut cream plus a pinch of xanthan gum. Mayo helps keep flavor neutral and texture tender. Do not overfill the iron; mini irons use about 2 tablespoons batter. Cook until steam slows to avoid eggy taste. Cool on a rack and toast for best structure. Store up to 4 days in the fridge or 2 months frozen; reheat by toasting, not microwaving.
