Instructions

Instructions

  • Arrange 16–18 mini 2-ounce cups on a sheet pan for easy transfer to the fridge.
  • Add the cherry gelatin powder to a medium heatproof bowl and pour in the boiling water.
  • Whisk until the gelatin is completely dissolved and no graininess remains, about 1–2 minutes.
  • Stir in the cold water to cool the mixture slightly.
  • Whisk in the vodka, grenadine, and fresh lime juice, then taste and adjust lime or grenadine to preference.
  • Pour the mixture into the prepared cups, leaving a little headspace for garnishes.
  • Refrigerate until fully set, about 2–4 hours or overnight for a firmer texture.
  • Garnish just before serving with a small lime wedge or a well-drained halved maraschino cherry.

Notes

Yields about 16–18 shots using 2-ounce cups. Keep total alcohol to about 1/2 cup per 3 oz box of gelatin for a firm set. Chill vodka beforehand to help the mixture set. Pat cherries dry to prevent color bleed. Store covered in the refrigerator for up to 4–5 days. For a fizzy variation, replace the 1/2 cup cold water with cold lemon-lime soda (softer set).
